From best friends to business partners. Get to know the female team behind the Beverly Hills destination Velverie Cafe and Teahouse: Owner Chloe Strumpf and General Manager Charli Weie
What was the inspiration behind the opening of Velverie?
We wanted to build something inspired by the timeless concept of a European café, but more modern, approachable, and eccentric. We love anything considered “over the top,” which is why we went with our maximalist interior design style. Our goal is to normalize the idea that luxury does not equal exclusivity. So often we save that “special item” or wait to make time for that “special occasion” when we should be able to enjoy something special as often as possible. I hope Velverie provides several opportunities to live by that philosophy in ways big and small and encourages others to build something of their own based on their passions and unique point of view.
What did you dream of becoming when you were younger?
Charli: journalist - went to school for communications, but have worked in restaurants that gave me a strong hospitality foundation
Chloe: musician - went to school for music and business. I always knew I eventually wanted to start something myself, but never imagined it would be a restaurant. I knew I would need Charli’s help filling in the blanks, and here we are today!
The action or decision you're most proud of?
To actually open our doors! It’s easy to daydream about ideas and plans, but we decided to go through with the opening. It was at the tail end of a covid surge in June of 2021 and many things were still up in the air, but we decided there would never be a perfect time.
If you could have dinner with three inspirational women, dead or alive, who would they be and why?
Charli: Sofia coppola, Alison Mosshart, Carrie Fisher
Chloe: Elsa Schiaparelli, Lady Gaga, Nina Simone
All six are creative inspirations to both of us and were trailblazers in their fields.
What keeps you motivated daily?
Sounds cheesy, but each other! We would have probably given up month one if we were going through this journey with anyone else. We’ve had to pivot many times since opening, requiring you to feel comfortable being honest and open with the people around you. Since we already built that relationship, it was much easier to have those conversations and trust that we had the right intentions.
Any advice for women who dream of opening their very own restaurant?
Always trust your gut. You know more than you think! Everything is fixable; remember that only you will know what is truly right for your concept. Try not to get swayed by opinions from people who have no experience in what you’re trying to do, or those who claim to have expertise. Even if someone has had success in the field, it doesn’t mean they can run your business better than you.
